Megan from Hansel and Gretel Cakes, is one of Brisbane’s leading cake designers and is also one of the most fun, hilarious and loveable people we’ve been fortunate enough to encounter. This interview was such a treat, and not just because we were generously gifted our own cake, but because Megan is just a joyful human and genuinely loves what she does. We had the privilege of being invited into Megan’s studio and kitchen to chat about her cake making journey and catch a glimpse behind the scenes.

How did Hansel and Gretel Cakes start?

Hansel and Gretel started because I was studying at uni and I hated what I was studying, so I used baking as a form of escape from doing my assignments and studying. I worked in bakeries all through high school and uni and it felt really natural to return to what I enjoyed. Then friends started asking me for cakes and then I did a market at Eatons Hill on a Sunday morning and then from there I picked up lots of customers and then organically I quit my job and that’s how it happened.

Have you always loved baking and how did you learn?

I loved eating what I baked to begin with, so I would bake something and then I could eat it, but then I realised that it would bring people joy when I brought something over that I baked, so I started to enjoy that a bit more than eating it. I am totally self taught, pretty much all YouTube and trial and error, a lot of error and a lot of trial.

Tell us about your style?

My husband is a minimalist and I’m a maximalist. I was always so afraid to embrace my maximalism because I thought people would think it was too much, but I think people love a bit of maximalism every now and then. Cake is something you can be maximalist with, it’s meant to bring people joy, so why would you have a boring cake?! Your cake isn't something that you look at for the rest of your life, you’re not going to put photos of it on your wall, so why not have fun with it? Make your guests happy and smile and say “have you seen the cake?!”.

What’s the best part of your job?

I think my entire job is exciting, I get to make a product that makes people happy, a product that people use to celebrate their most happy moments and I think that for me is the best part of my job. My customers come in to pick up their cake and they just go “woah!”, that’s the part that makes all the hard work and all the buttercream stains worth it, because it makes people happy and that’s why I got into this job.

I also like that cake making fills my creative bubble each week. I’m a creative person, I’ve got to fill that cup and I’m happy that I get to do that and it makes people happy.
